2/3 cup warm water 2 pkgs yeast (2 Tbs)
5-6 Cups flour
1 cup warm milk
1/2 cup sugar
1 1/2 tsp salt
1/4 cup softened margarine
2 eggs
oil
Sprinkle yeast into warm water in large warm bowl. Stir until dissolved.
Add milk, sugar, salt, margarine, eggs and 3 cups flour and beat with electric mixer until smooth (1 minute). Beat at medium speed for another 2-3 minutes or until thick and elastic.
Stir in 2-3 cups of remaining flour gradually with wooden spoon (or bosch with hooks). Use enough flour to make a soft dough which leaves the side of the bowl, adding more if necessary. Turn out on a floured board. Round up into a ball and divide into two equal portions. Knead 5-10 minutes until dough is smooth and not sticky.
Cover with plastic wrap and then a towel. Let rest 20 minutes. Punch down and shape each portion into a coffee cake or rolls and place on a greased cookie sheet. Cover loosely with plastic wrap.
Refrigerate 2 to 48 hours. When ready to bake let stand at room temperature for 10 minutes. Bake at 375 for 25-30 minutes or until done. Bake on a lower oven rack position for best results.
* Those are mom's instructions. I follow them up until the fridge part. I don't think it is necessary to refrigerate. I like to form them into rolls or sweet rolls and then let them rise for 1 to 2 hours before baking.
** To make sweet roles roll the dough out into a rectangular shape, slap on some melted butter, generously sprinkle a sugar/cinnamon mixture onto the buttered dough, and roll the dough as tightly as you can. Then simply cut the rolls to the desired size and put them on a greased cookie sheet. Spread frosting on rolls right after they come out of the oven. You can make it or use store bought frosting. A simple, quick recipe for frosting is below.
Simple Vanilla Frosting
3 cups powdered sugar
1 tsp. vanilla
1/2 cup butter softened
evaporated or regular milk (your preference)
Combine powdered sugar, vanilla, and butter. Mix with electric mixer until ingredients are combined. Stir in enough milk to reach desired consistency (It shouldn't take much, a few tablespoons should be plenty). If you make it too thin just add more powdered sugar.
